Ingredients

Equipment Needed

  • Cutting board & knife
  • Can opener
  • 1 large bowl
  • 1 small bowl

Directions

  • Open and drain cans of vegetables and pour into a large bowl. 
  • Dice red onion, bell pepper, and celery. Combine with ingredients already in the large bowl. 
  • In separate small bowl, mix oil, apple cider vinegar, and sugar. Put over the top of your ingredients in the larger bowl. Let sit for an hour. 
  • Serve either with a bed of lettuce or tortilla chips. Garnish with cilantro if you have it on hand.
