Directions
- Preheat oven to 350ยบ
- Beat together egg, egg whites, and water in bowl.
- Dip eggplant slices in egg.
- Dip eggplant slices in breadcrumbs.
- Place on baking sheet and bake 7-10 minutes on each side.
- Spread sauce to cover the bottom of baking dish.
- Place layer of eggplant slices in sauce and sprinkle with Parmesan and mozzerella.
- Repeat with remaining ingreidents, ending with cheeses on top.
- Sprinkle with basil on top.
- Bake 35 minutes.
