Energy Bites

Ingredients

  • 2 cups rolled oats
  • 1 cup dried fruit (cranberries, raisins, or apricots)
  • ½ cup nut butter (peanut butter, almond butter, or cashew butter)
  • ¼ cup honey
  • ¼ cup chopped nuts (walnuts, almonds, or pecans)
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract (optional)

Equipment Needed

  • Large bowl
  • Spoon (wooden suggested)

Directions

  • In a large mixing bowl, combine the oats and dried fruit.
  • In a separate bowl, mix together the nut butter and honey until smooth.
  • Add the nut butter mixture to the oat mixture and stir until everything is well combined.
  • Fold in the chopped nuts and salt.
  • If desired, add the vanilla extract for flavor.
  • Use your hands to shape the mixture into bars, about 1 inch wide and 2-3 inches long. You should end up with around 12-15 bars.
  • Store the bars in an airtight container or wrap them individually in plastic wrap, parchment paper or aluminum foil.
