Ingredients
Stir-Fry
- 1 Red Pepper - sliced into 1/4 in. matchsticks
- 2 Cloves Garlic - minced
- 1 Onion - sliced
- 1 Broccoli Crown - cut into bite-size pieces
- 2 Carrots - sliced into thin rounds
- 1 Cup Rice - cooked, set aside.
Sauce
- 2 Tablespoons - Soy Sauce
- 2 Tablespoons - Maple Syrup
- 1 Teaspoon - Rice Wine Vinegar
- Red Pepper Flakes (to taste)
- Salt and Pepper (to taste)
Optional Garnishes
- Green Onions
- Sesame Seeds
Directions
- Cook rice.
- Heat 1-2 tablespoons cooking oil in pan until glistening.
- Add onions, carrots, and peppers, cook 8-10 minutes or until softened. Stir frequently.
- Add garlic, cook 2-3 minutes or until fragrant. Stir frequently.
- Add broccoli, cook 3-5 minutes. Stir frequently.
- Combine all sauce ingredients in medium-sized bowl and stir to combine.
- Add sauce to pan with vegetables. Cook until warmed through. Add starch (corn or tapioca will do) to thicken sauce, if desired.
- Divide rice between servings. Top with sauteed vegetables and sauce. Top with garnishes, if desired.
